Ingredients
- 2 cups All-Purpose Flour
- 1/4 cup Granulated Sugar
- 1 cup Unsalted Butter
- 4 cups Fresh Rhubarb, chopped
- 2 cups Granulated Sugar
- 3 large Eggs
- 1 teaspoon Vanilla Extract (Optional)
- 1/3 cup All-Purpose Flour (for filling)
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Combine 2 cups of flour, 1/4 cup of sugar, and salt in a medium bowl. Cut in the butter until crumbly, then press this mixture into the bottom of the dish.
- Bake for about 15 minutes until just golden.
- Mix together the chopped rhubarb, 2 cups of sugar, remaining 1/3 cup of flour, baking powder, eggs, and vanilla in another bowl until well combined.
- Pour the rhubarb filling over the baked crust, spreading it out evenly.
- Return it to the oven and bake for an additional 30-35 minutes until set and golden on top.
- Cool completely before slicing into squares.
Notes
Serve with whipped cream for added flavor. Store leftovers in an airtight container for up to 5 days.
