Ingredients

  • 2 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 cup Unsalted Butter
  • 4 cups Fresh Rhubarb, chopped
  • 2 cups Granulated Sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract (Optional)
  • 1/3 cup All-Purpose Flour (for filling)
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Combine 2 cups of flour, 1/4 cup of sugar, and salt in a medium bowl. Cut in the butter until crumbly, then press this mixture into the bottom of the dish.
  3. Bake for about 15 minutes until just golden.
  4. Mix together the chopped rhubarb, 2 cups of sugar, remaining 1/3 cup of flour, baking powder, eggs, and vanilla in another bowl until well combined.
  5. Pour the rhubarb filling over the baked crust, spreading it out evenly.
  6. Return it to the oven and bake for an additional 30-35 minutes until set and golden on top.
  7. Cool completely before slicing into squares.

Notes

Serve with whipped cream for added flavor. Store leftovers in an airtight container for up to 5 days.
