A refreshing and vibrant pasta salad inspired by Mexican street food, featuring sweet corn and creamy ingredients.
Ingredients
- 8 oz. pasta (like rotini or penne)
- 2 cups sweet corn (fresh, canned, or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 lime, juiced
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
- Combine the cooled pasta, sweet corn, cherry tomatoes, red onion, and cilantro in a large mixing bowl. Mix gently.
- Mix the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a separate bowl until smooth. Taste and adjust seasoning as needed.
- Pour the dressing over the pasta mixture and toss gently until coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with cilantro or lime wedges.
Notes
For left overs, store in an airtight container and enjoy within 2-3 days. The flavors deepen overnight for a more robust taste.
