Description

A refreshing and vibrant pasta salad inspired by Mexican street food, featuring sweet corn and creamy ingredients.


Ingredients

  • 8 oz. pasta (like rotini or penne)
  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 lime, juiced
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. Combine the cooled pasta, sweet corn, cherry tomatoes, red onion, and cilantro in a large mixing bowl. Mix gently.
  3. Mix the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a separate bowl until smooth. Taste and adjust seasoning as needed.
  4. Pour the dressing over the pasta mixture and toss gently until coated.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
