A comforting slow-cooked chili with a creamy texture, perfect for family gatherings.


Ingredients

  • 1 pound Boneless, skinless chicken breasts
  • 2 cans White beans (canned or dried)
  • 2 cans Green chiles (canned or diced fresh)
  • 8 oz Cream cheese
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4 cups Chicken broth
  • Fresh cilantro (optional for garnish)
  • Shredded cheese (optional for garnish)


Instructions

  1. Gather and prepare all ingredients. Start by rinsing the white beans if you’re using dried ones and chopping your fresh veggies. Place the boneless, skinless chicken in the bottom of your slow cooker.
  2. Cook all ingredients together. Add the beans, green chiles, and a good pinch of salt and pepper. Pour enough chicken broth to cover the mixture. Set your slow cooker to low for 360 minutes or high for 240 minutes.
  3. Shred the chicken and stir in cream cheese. Once cooked, take two forks and shred the chicken right in the slow cooker. Stir in the cream cheese until melted and creamy.
  4. Continue cooking until fully done. Let the chili simmer an additional 30 minutes to meld all the flavors before serving.
  5. Serve and enjoy. Ladle the chili into bowls and garnish with fresh cilantro or shredded cheese if you like.

Notes

Store leftovers in an airtight container and refrigerate for 3-4 days. For longer storage, freeze in portions.
