Description

A comforting slow cooker soup with chicken, gnocchi, and fresh spinach, perfect for busy families.


Ingredients

  • 1 lb Boneless and skinless chicken breast or thighs
  • 1 package Gnocchi (fresh or store-bought)
  • 2 cups Fresh spinach
  • 1/2 cup Heavy cream
  • 4 cups Chicken or vegetable broth (low sodium)
  • Salt to taste
  • Pepper to taste
  • 1 tsp Garlic powder


Instructions

  1. Gather and prepare all ingredients. In the slow cooker, place the chicken and add seasoning to your liking. Pour in the broth until it covers the chicken fully.
  2. Cook on low for several hours, about 6 to 8, until the chicken is easily shredded with a fork.
  3. Add the gnocchi and stir in the cream. Allow to bubble for approximately 15-20 minutes until the gnocchi is tender.
  4. Serve hot, garnished with fresh herbs or grated cheese.

Notes

Store leftovers in an airtight container for up to three days, or freeze without cream for longer storage.
