A sweet and tart dessert that combines the delicious flavors of rhubarb with a creamy custard in a crumbly crust, perfect for family gatherings.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup milk
- 1/3 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Combine 1 1/2 cups flour and powdered sugar in a mixing bowl.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the greased baking dish to form a crust.
- Bake the crust for 10-12 minutes or until lightly golden.
- Combine the chopped rhubarb, granulated sugar, eggs, milk, 1/3 cup flour, vanilla extract, and baking powder in another bowl.
- Mix well until smooth.
- Pour the rhubarb mixture over the pre-baked crust and spread it evenly.
- Bake for 30-35 minutes, or until the custard is set and slightly golden.
- Allow the bars to cool before cutting into them and serve.
Notes
For best flavor, use fresh rhubarb when in season. Serve with whipped cream or vanilla ice cream.
