Description

A sweet and tart dessert that combines the delicious flavors of rhubarb with a creamy custard in a crumbly crust, perfect for family gatherings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup milk
  • 1/3 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine 1 1/2 cups flour and powdered sugar in a mixing bowl.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Press the mixture into the bottom of the greased baking dish to form a crust.
  5. Bake the crust for 10-12 minutes or until lightly golden.
  6. Combine the chopped rhubarb, granulated sugar, eggs, milk, 1/3 cup flour, vanilla extract, and baking powder in another bowl.
  7. Mix well until smooth.
  8. Pour the rhubarb mixture over the pre-baked crust and spread it evenly.
  9. Bake for 30-35 minutes, or until the custard is set and slightly golden.
  10. Allow the bars to cool before cutting into them and serve.

Notes

For best flavor, use fresh rhubarb when in season. Serve with whipped cream or vanilla ice cream.
