Description

Creamy rhubarb cheesecake bars featuring a buttery graham cracker crust, perfect for family gatherings and special occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2 cups rhubarb, chopped
  • 1/4 cup flour


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Combine the graham cracker crumbs, 1/2 cup sugar, and melted butter in a bowl. Press into the bottom of the baking dish.
  3. Beat the cream cheese, 1 cup sugar, and vanilla in a mixing bowl until smooth.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Fold in the chopped rhubarb and flour gently to keep the rhubarb intact.
  6. Pour the cheesecake mixture over the crust and smooth the top.
  7. Bake for 30-35 minutes until the center is set but slightly jiggly.
  8. Allow to cool to room temperature, then chill in the refrigerator before slicing.

Notes

These bars can be stored in an airtight container in the refrigerator and can be frozen for later enjoyment.
