Ingredients
- 2 large cucumbers, sliced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Begin by slicing the cucumbers into thin rounds, aiming for uniform sizes to ensure even mixing. Add the cucumber slices to a large bowl.
- Next, thinly slice the red onion and add it to the bowl with the cucumbers.
- Halve the cherry tomatoes and add them to the bowl along with freshly chopped parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad ingredients in your large bowl. Toss everything gently to coat.
- Serve immediately, or chill in the refrigerator for about 30 minutes for better flavor.
