Description

A quick and uncomplicated rhubarb jam that balances sweet and tart flavors, perfect for breakfast or snacks.

Ingredients

  • 4 cups chopped rhubarb stalks
  • 2 cups granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water
  • Optional: pinch of ground ginger or 1 cinnamon stick

Instructions

  1. Prepare the rhubarb: Wash and chop the rhubarb stalks into 1/2-inch pieces.
  2. Mix ingredients: Place the chopped rhubarb, sugar, lemon juice, and water in a large saucepan. Stir gently and let it sit for 10 minutes.
  3. Boil the mixture: Heat the mixture over medium heat until it boils, stirring frequently to dissolve the sugar.
  4. Simmer: Reduce heat and simmer uncovered for 25-30 minutes, stirring occasionally, until it thickens.
  5. Test consistency: To test consistency, spoon some onto a cold plate; if it wrinkles when pushed, it’s ready.
  6. Flavor boost (optional): Optionally, add ginger or a cinnamon stick halfway through cooking, removing the stick before bottling.
  7. Jar the jam: Spoon the jam into sterilized jars, leaving 1/4 inch of headspace, and let cool before sealing.

Notes

This jam can be spread on toast, used as a topping for desserts, or incorporated into baking recipes.
