Ingredients
- 4 cups chopped rhubarb stalks
- 2 cups granulated sugar
- 2 tablespoons fresh lemon juice
- 1/4 cup water
- Optional: pinch of ground ginger or 1 cinnamon stick
Instructions
- Prepare the rhubarb: Wash and chop the rhubarb stalks into 1/2-inch pieces.
- Mix ingredients: Place the chopped rhubarb, sugar, lemon juice, and water in a large saucepan. Stir gently and let it sit for 10 minutes.
- Boil the mixture: Heat the mixture over medium heat until it boils, stirring frequently to dissolve the sugar.
- Simmer: Reduce heat and simmer uncovered for 25-30 minutes, stirring occasionally, until it thickens.
- Test consistency: To test consistency, spoon some onto a cold plate; if it wrinkles when pushed, it’s ready.
- Flavor boost (optional): Optionally, add ginger or a cinnamon stick halfway through cooking, removing the stick before bottling.
- Jar the jam: Spoon the jam into sterilized jars, leaving 1/4 inch of headspace, and let cool before sealing.
