Delightful rhubarb cream cheese bars that capture the joy of family gatherings and baking.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter
- 1 teaspoon ground cinnamon
- 8 ounces cream cheese
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups rhubarb
- ½ cup brown sugar
- 1 cup rolled oats
- ½ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
- Combine the flour, granulated sugar, and butter in a mixing bowl until it resembles coarse crumbs. Stir in the oats and ground cinnamon, reserving about a cup of the mixture for the topping. Press the remaining mixture into the bottom of the prepared pan.
- Beat the cream cheese, vanilla extract, and egg in another bowl until smooth. Fold in the chopped rhubarb.
- Pour the cream cheese mixture over the crust and spread evenly. Sprinkle the reserved mixture on top.
- Bake for 30-35 minutes, until the edges are golden and the center is set. Let cool for at least an hour before cutting into bars.
Notes
Serve with whipped cream or vanilla ice cream for a delightful treat. Store in the refrigerator for up to 5 days.
