Delightful bars combining the tartness of rhubarb and creaminess of cheese, perfect for family gatherings.
Ingredients
- 2 cups all-purpose flour (or gluten-free flour)
- 1 cup granulated sugar (or sugar substitute)
- 1/2 cup unsalted butter (or margarine)
- 1 teaspoon ground cinnamon (optional; nutmeg for variation)
- 8 ounces cream cheese (or Greek yogurt)
- 1 teaspoon vanilla extract (or almond extract)
- 1 large egg (or flax egg)
- 2 cups rhubarb (or cranberries/raspberries)
- 1/2 cup brown sugar (or light brown sugar)
- 1 cup rolled oats (or quick oats)
- 1/2 cup melted butter (or coconut oil)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13 inch baking pan with parchment paper.
- Combine the flour, granulated sugar, and butter in a mixing bowl, mixing until it resembles coarse crumbs.
- Stir in the oats and ground cinnamon. Reserve about 1 cup for the topping and press the rest into the prepared pan to form a base.
- Beat together the cream cheese, vanilla extract, and egg in another bowl until smooth. Fold in the chopped rhubarb.
- Pour the rhubarb mixture onto the crust and spread it evenly.
- Sprinkle the reserved mixture over the top, then bake for 30-35 minutes, until golden and set.
- Let cool for at least an hour before cutting into bars.
Notes
Use fresh rhubarb for the best flavor. Bars can be served with ice cream or whipped cream.
