Ingredients

  • 2 cups all-purpose flour (or gluten-free flour)
  • 1 cup granulated sugar (or sugar substitute)
  • 1/2 cup unsalted butter (or margarine)
  • 1 teaspoon ground cinnamon (optional; nutmeg for variation)
  • 8 ounces cream cheese (or Greek yogurt)
  • 1 teaspoon vanilla extract (or almond extract)
  • 1 large egg (or flax egg)
  • 2 cups rhubarb (or cranberries/raspberries)
  • 1/2 cup brown sugar (or light brown sugar)
  • 1 cup rolled oats (or quick oats)
  • 1/2 cup melted butter (or coconut oil)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13 inch baking pan with parchment paper.
  3. Combine the flour, granulated sugar, and butter in a mixing bowl, mixing until it resembles coarse crumbs.
  4. Stir in the oats and ground cinnamon. Reserve about 1 cup for the topping and press the rest into the prepared pan to form a base.
  5. Beat together the cream cheese, vanilla extract, and egg in another bowl until smooth. Fold in the chopped rhubarb.
  6. Pour the rhubarb mixture onto the crust and spread it evenly.
  7. Sprinkle the reserved mixture over the top, then bake for 30-35 minutes, until golden and set.
  8. Let cool for at least an hour before cutting into bars.

Notes

Use fresh rhubarb for the best flavor. Bars can be served with ice cream or whipped cream.
