Ingredients
- 1.5 lb beef strips
- 2-3 bell peppers (any colors)
- 1 large onion (yellow or white)
- 1/2 cup soy sauce
- 3-4 cloves garlic (minced)
- Ground black pepper (to taste)
- 2 tbsp olive oil
- Cornstarch (optional, for thickening)
Instructions
- Gather and prepare all ingredients: cut the beef strips into bite-sized pieces, slice the peppers and onion, and mince the garlic.
- In a pan over medium heat, add olive oil and sauté the onion and garlic until fragrant.
- Place the beef strips in the crockpot, followed by the sautéed onion and garlic. Add the sliced peppers on top.
- Pour soy sauce evenly over the ingredients and season with ground black pepper.
- Set the crockpot to low and cook for 6-8 hours, or on high for 3-4 hours.
- If a thicker sauce is desired, mix cornstarch with water and stir into the crockpot 30 minutes before serving.
- Serve hot over rice, noodles, or with crusty bread.
Notes
Try adding a splash of balsamic vinegar or teriyaki sauce for extra flavor. Use leftovers creatively in pasta or salads.
