Description

A comforting Crockpot Pepper Steak recipe with tender beef and vibrant bell peppers, perfect for busy days.

Ingredients

  • 1.5 lb beef strips
  • 2-3 bell peppers (any colors)
  • 1 large onion (yellow or white)
  • 1/2 cup soy sauce
  • 3-4 cloves garlic (minced)
  • Ground black pepper (to taste)
  • 2 tbsp olive oil
  • Cornstarch (optional, for thickening)

Instructions

  1. Gather and prepare all ingredients: cut the beef strips into bite-sized pieces, slice the peppers and onion, and mince the garlic.
  2. In a pan over medium heat, add olive oil and sauté the onion and garlic until fragrant.
  3. Place the beef strips in the crockpot, followed by the sautéed onion and garlic. Add the sliced peppers on top.
  4. Pour soy sauce evenly over the ingredients and season with ground black pepper.
  5. Set the crockpot to low and cook for 6-8 hours, or on high for 3-4 hours.
  6. If a thicker sauce is desired, mix cornstarch with water and stir into the crockpot 30 minutes before serving.
  7. Serve hot over rice, noodles, or with crusty bread.

Notes

Try adding a splash of balsamic vinegar or teriyaki sauce for extra flavor. Use leftovers creatively in pasta or salads.
