Ingredients
- 4 large Yukon Gold potatoes, peeled and diced
- 6 slices of bacon, chopped
- 1 cup shredded cheddar cheese
- 4 oz. cream cheese, softened
- 4 cups chicken or vegetable broth
- 1 cup whole milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients. Start by washing and peeling the potatoes. Dice them into even chunks.
- Place the potatoes in the crockpot along with the bacon. Pour in the broth and cook on low for several hours.
- After the potatoes are tender, use an immersion blender to partially blend the soup, creating a creamy base while leaving some chunks for texture.
- Stir in the cheese and cream cheese, allowing them to melt completely. Continue to simmer until fully combined and heated through.
- Ladle the soup into bowls and top with extra cheese or crispy bacon for a delicious finish.
