Ingredients

  • 1 lb ground beef
  • 4 cups potatoes, diced into small cubes
  • 2 cups cheddar cheese, freshly shredded
  • 4 cups beef broth (or chicken broth)
  • 1 onion, diced
  • 2 carrots, diced finely
  • 3 cloves garlic, minced
  • 1 cup milk or cream
  • Salt to taste
  • Pepper to taste
  • Optional herbs for seasoning


Instructions

  1. Gather and prepare all ingredients by dicing the potatoes, onions, and carrots into manageable pieces.
  2. In a skillet over medium heat, brown the ground beef until no longer pink, breaking it up into small pieces.
  3. Drain any excess grease and transfer the ground beef to your crockpot.
  4. Add the diced potatoes, onions, carrots, and minced garlic to the crockpot.
  5. Pour in the broth and add the milk or cream, mixing everything together gently.
  6. Season the mixture with salt and pepper to taste.
  7. Cover and cook on low for 360 minutes or on high for 240 minutes until the vegetables are tender.
  8. Just before serving, stir in the shredded cheddar cheese until melted.
  9. Serve hot, garnished with extra cheese or toppings like crispy bacon, fresh herbs, or bread.
