A cozy and comforting cheeseburger soup made in a crockpot, perfect for busy families.
Ingredients
- 1 lb ground beef
- 4 cups potatoes, diced into small cubes
- 2 cups cheddar cheese, freshly shredded
- 4 cups beef broth (or chicken broth)
- 1 onion, diced
- 2 carrots, diced finely
- 3 cloves garlic, minced
- 1 cup milk or cream
- Salt to taste
- Pepper to taste
- Optional herbs for seasoning
Instructions
- Gather and prepare all ingredients by dicing the potatoes, onions, and carrots into manageable pieces.
- In a skillet over medium heat, brown the ground beef until no longer pink, breaking it up into small pieces.
- Drain any excess grease and transfer the ground beef to your crockpot.
- Add the diced potatoes, onions, carrots, and minced garlic to the crockpot.
- Pour in the broth and add the milk or cream, mixing everything together gently.
- Season the mixture with salt and pepper to taste.
- Cover and cook on low for 360 minutes or on high for 240 minutes until the vegetables are tender.
- Just before serving, stir in the shredded cheddar cheese until melted.
- Serve hot, garnished with extra cheese or toppings like crispy bacon, fresh herbs, or bread.
Notes
Store leftovers in the refrigerator for 3-4 days or freeze for up to three months. Reheat on the stovetop or in the microwave.
