Description

A delightful dessert featuring sweet and tart rhubarb wrapped in a buttery crumble, perfect for gatherings and cozy family evenings.


Ingredients

  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2/3 cup cold butter, cut into 1/2-inch cubes
  • 1/2 teaspoon salt
  • 1 egg
  • 5 stalks rhubarb, sliced into 1/2-inch thick pieces
  • 1/2 cup sugar for the filling
  • 1 lemon, zested and juiced
  • 1 teaspoon vanilla extract
  • 2 1/2 teaspoons cornstarch
  • 1 cup old-fashioned oats
  • 1/2 cup sugar for topping
  • 1 teaspoon vanilla sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup melted and slightly cooled butter


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine in a large bowl 1/2 cup sugar, flour, baking powder, salt, and cold butter until it resembles coarse crumbs.
  3. Stir in the egg until the dough is combined.
  4. Mix in another bowl the sliced rhubarb, 1/2 cup sugar, lemon zest, lemon juice, vanilla extract, and cornstarch until coated.
  5. Spread half of the crust mixture into a greased 9×13-inch baking pan. Pour the rhubarb filling on top, then sprinkle the remaining crust mixture over it.
  6. Combine in a small bowl oats, 1/2 cup sugar, vanilla sugar, ground cinnamon, and melted butter. Sprinkle this mixture over the top.
  7. Bake for about 45 minutes until the top is golden brown and the filling is bubbly.
  8. Allow to cool completely before slicing.

Notes

Feel free to add a pinch of almond extract for an extra flavor dimension or mix it up by using cooked apples or berries if rhubarb is unavailable.
