A delightful dessert featuring sweet and tart rhubarb wrapped in a buttery crumble, perfect for gatherings and cozy family evenings.
Ingredients
- 1/2 cup sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2/3 cup cold butter, cut into 1/2-inch cubes
- 1/2 teaspoon salt
- 1 egg
- 5 stalks rhubarb, sliced into 1/2-inch thick pieces
- 1/2 cup sugar for the filling
- 1 lemon, zested and juiced
- 1 teaspoon vanilla extract
- 2 1/2 teaspoons cornstarch
- 1 cup old-fashioned oats
- 1/2 cup sugar for topping
- 1 teaspoon vanilla sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup melted and slightly cooled butter
Instructions
- Preheat your oven to 350°F (175°C).
- Combine in a large bowl 1/2 cup sugar, flour, baking powder, salt, and cold butter until it resembles coarse crumbs.
- Stir in the egg until the dough is combined.
- Mix in another bowl the sliced rhubarb, 1/2 cup sugar, lemon zest, lemon juice, vanilla extract, and cornstarch until coated.
- Spread half of the crust mixture into a greased 9×13-inch baking pan. Pour the rhubarb filling on top, then sprinkle the remaining crust mixture over it.
- Combine in a small bowl oats, 1/2 cup sugar, vanilla sugar, ground cinnamon, and melted butter. Sprinkle this mixture over the top.
- Bake for about 45 minutes until the top is golden brown and the filling is bubbly.
- Allow to cool completely before slicing.
Notes
Feel free to add a pinch of almond extract for an extra flavor dimension or mix it up by using cooked apples or berries if rhubarb is unavailable.
