Ingredients
- 8 oz. cavatappi pasta
- 1 head of romaine lettuce
- Grated Parmesan cheese for serving
- 1 lb. chicken breast tenders
- 1/2 tsp. sea salt
- 1/8 tsp. black pepper
- 2 Tbsp. butter
- 3/4 cup panko bread crumbs
- 1 clove of garlic
- 1 Tbsp. anchovy paste
- 1 egg yolk
- 4 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 2 Tbsp. olive oil
- 2 Tbsp. canola oil
Instructions
- Cook the pasta according to package directions until al dente, drain, and rinse with cold water.
- Whisk together grated garlic, egg yolk, lemon juice, Dijon mustard, and sea salt for the dressing. Gradually drizzle in olive oil and canola oil while whisking until emulsified.
- Melt butter in a skillet, add panko, and cook until golden brown.
- Grill seasoned chicken tenders until cooked through, then let rest and dice.
- Combine pasta, chicken, and romaine in a large bowl. Drizzle with dressing and toss to combine.
- Top with grated Parmesan and crispy breadcrumbs, then serve immediately.
