Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (e.g., bell peppers, zucchini, red onion)
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 lemon, sliced
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the chicken breasts with olive oil, Italian seasoning, salt, and pepper in a large bowl. Make sure each piece is well-coated.
- Toss the mixed vegetables in the same bowl to capture any remaining oil and seasoning.
- Spread the chicken and vegetables evenly on a sheet pan in a single layer.
- Place lemon slices on top of the chicken.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the veggies are tender.
