Ingredients
- 1 tablespoon chia seeds
- 12 to 16 ounces cold water
- 1 to 2 tablespoons fresh lemon juice
- 1 teaspoon honey or maple syrup (optional)
- A pinch of salt
- Optional: a few cucumber slices or a splash of coconut water
Instructions
- Add cold water and chia seeds to a large glass or jar. Stir for 20 to 30 seconds to prevent clumping.
- Let it rest for 5 minutes, then stir again.
- Mix in lemon juice, honey, and salt. Stir until well combined.
- Let it sit for another 10 minutes until it thickens slightly.
- Serve in a tall glass, garnish with cucumber slices or coconut water if desired.
