Description

Delightful rhubarb bars with a gooey filling and buttery crust, perfect for family gatherings.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour, divided
  • 4 cups chopped fresh rhubarb
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup packed light brown sugar
  • 1/2 cup old-fashioned rolled oats


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing or lining it with parchment paper.
  2. Cream the softened butter and 1/2 cup of granulated sugar together until fluffy.
  3. Mix in 2 cups of flour and 1/4 teaspoon of salt until combined into a soft dough.
  4. Press the dough evenly into the bottom of the baking dish.
  5. Bake the crust for about 15 minutes until the edges are slightly golden.
  6. Combine chopped rhubarb, 1 cup of sugar, 1/4 cup of flour, and 1/2 teaspoon of cinnamon in a bowl.
  7. Combine brown sugar, oats, and remaining flour, cutting in softened butter until crumbly.
  8. Spread the rhubarb filling evenly over the crust and sprinkle the crumb topping.
  9. Bake again for 30-35 minutes until the topping is golden and the filling is bubbly.
  10. Allow to cool completely before slicing into squares.

Notes

Top with powdered sugar, whipped cream, or yogurt for serving. Store in an airtight container in the refrigerator for up to a week.
