Description

Ingredients

  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups chopped mixed vegetables (carrots, green beans, peas)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the chopped onion and garlic, sauté until the onion is translucent and fragrant.
  3. Stir in the mixed vegetables and cook for another 5 minutes until they begin to brown.
  4. Add the diced tomatoes, vegetable broth, oregano, salt, and pepper. Bring to a boil.
  5. Once boiling, add the orzo and reduce heat to a simmer, stirring to prevent sticking.
  6. Cook for 8-10 minutes, or until the orzo is tender.
  7. Adjust seasoning as needed and serve hot, garnished with fresh parsley if desired.

Notes

For extra protein, consider adding a can of white beans or top with grated Parmesan. This soup can be easily adapted with various vegetables and herbs.
