A comforting and quick vegetable orzo soup perfect for busy family nights, packed with flavor and nutrition.
Ingredients
- 1 cup orzo pasta
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 cups chopped mixed vegetables (carrots, green beans, peas)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the chopped onion and garlic, sauté until the onion is translucent and fragrant.
- Stir in the mixed vegetables and cook for another 5 minutes until they begin to brown.
- Add the diced tomatoes, vegetable broth, oregano, salt, and pepper. Bring to a boil.
- Once boiling, add the orzo and reduce heat to a simmer, stirring to prevent sticking.
- Cook for 8-10 minutes, or until the orzo is tender.
- Adjust seasoning as needed and serve hot, garnished with fresh parsley if desired.
Notes
For extra protein, consider adding a can of white beans or top with grated Parmesan. This soup can be easily adapted with various vegetables and herbs.
