Description
A comforting and flavorful Tuscan White Bean Soup, perfect for busy weeknights, made with Italian sausage, beans, and fresh spinach.
Ingredients
- 1 pound Italian sausage
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 cups fresh spinach
- Olive oil for cooking
Instructions
- In a large pot, heat a little olive oil over medium heat. Add the Italian sausage and cook until browned.
- Remove the sausage and set it aside. In the same pot, add the onion, carrots, and celery. Cook until soft, about 5-7 minutes.
- Stir in the garlic and cook for an additional minute.
- Add the diced tomatoes, broth, white beans, oregano, thyme, and the reserved sausage. Bring to a boil.
- Reduce the heat and simmer for about 20 minutes.
- Stir in the fresh spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
For a creamier texture, mash a cup of beans against the side of the pot and stir them back in. This soup stores well and tastes even better the next day.
