Description

A comforting and flavorful Thai Inspired Chicken Soup filled with garlic, ginger, and vibrant herbs, perfect for bringing family together.


Ingredients

  • 1 lb chicken breast, diced
  • 1 tablespoon ginger, minced
  • 2 tablespoons red curry paste
  • 1 stalk lemongrass, chopped
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 cup mushrooms, sliced
  • 1 cup fresh herbs (cilantro, basil)
  • 1 tablespoon fish sauce
  • Juice of 1 lime
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat a little oil over medium heat. Add the ginger and lemongrass, and sauté for 1-2 minutes until fragrant.
  2. Add the red curry paste and cook for another minute.
  3. Stir in the chicken pieces and cook until they are no longer pink.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the coconut milk and mushrooms, and simmer for about 10 minutes.
  6. Stir in the fish sauce, lime juice, and season with salt and pepper.
  7. Serve hot, garnished with fresh herbs.

Notes

For a juicier option, you can use chicken thighs instead of breasts. You can also add extra vegetables for more nutrition and flavor.
