Description
A comforting and flavorful Thai Inspired Chicken Soup filled with garlic, ginger, and vibrant herbs, perfect for bringing family together.
Ingredients
- 1 lb chicken breast, diced
- 1 tablespoon ginger, minced
- 2 tablespoons red curry paste
- 1 stalk lemongrass, chopped
- 4 cups chicken broth
- 1 can coconut milk
- 1 cup mushrooms, sliced
- 1 cup fresh herbs (cilantro, basil)
- 1 tablespoon fish sauce
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat. Add the ginger and lemongrass, and sauté for 1-2 minutes until fragrant.
- Add the red curry paste and cook for another minute.
- Stir in the chicken pieces and cook until they are no longer pink.
- Pour in the chicken broth and bring to a simmer.
- Add the coconut milk and mushrooms, and simmer for about 10 minutes.
- Stir in the fish sauce, lime juice, and season with salt and pepper.
- Serve hot, garnished with fresh herbs.
Notes
For a juicier option, you can use chicken thighs instead of breasts. You can also add extra vegetables for more nutrition and flavor.
