Description

A comforting slow-cooked chicken dish with a sweet and savory sauce made from brown sugar, soy sauce, and pineapple, perfect for busy family nights.


Ingredients

  • 2 lbs chicken thighs or breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 clove garlic (minced)
  • 1 tsp ginger (grated)
  • 1/4 tsp black pepper
  • Green onions (for garnish)


Instructions

  1. In a bowl, mix together the soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and black pepper.
  2. Place the chicken in the Crock Pot and pour the sauce over it.
  3. Add the pineapple chunks on top.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  5. Serve over rice and garnish with green onions.

Notes

Use dark meat for richer flavor. Optionally, add a splash of orange juice or top with fresh basil or cilantro for added brightness.
