Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup coconut milk
- 1/4 cup shredded coconut
- 2 tablespoons melted butter
- 1 egg
- 1 teaspoon vanilla extract
- Optional: maple syrup for serving
Instructions
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine coconut milk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the shredded coconut.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with maple syrup if desired.
Notes
Use full-fat coconut milk for a richer texture. Leftovers can be stored in the fridge for 3 days or frozen for up to 2 months.
