Description

Soft, chewy sugar cookie bars topped with fluffy frosting, perfect for family gatherings and special occasions.


Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 whole egg
  • 1 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 3 Tbsp. cream cheese, softened
  • 1 tsp. baking powder
  • 2 cups all-purpose flour
  • 1/4 cup butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 Tbsp. milk
  • 1/2 tsp. vanilla extract (for frosting)
  • pink food coloring gel (optional)
  • sprinkles (optional)


Instructions

  1. Pre-heat oven to 350°F. Line a 9 x 9-inch baking pan with parchment paper and set aside.
  2. In a large bowl with a mixer, beat together softened butter and sugar until fluffy. Add egg, vanilla extract, almond extract, and cream cheese until combined.
  3. Slowly add flour and baking powder until a thick cookie dough batter forms, being careful not to overmix.
  4. Spread the cookie dough into the prepared baking pan evenly. Bake for 20-25 minutes or until set and the top is light golden brown. Let cool for a few minutes.
  5. For the frosting, beat together butter, powdered sugar, milk, vanilla extract, and pink food coloring gel until desired consistency. Adjust with milk or powdered sugar as needed.
  6. Once cooled, spread the frosting generously on top of the cookie bars, sprinkle with decorations, and cut into 16 square bars. Enjoy!

Notes

For a richer flavor, try substituting half of the vanilla for lemon zest. Store leftovers in an airtight container for 2-3 days at room temperature.
