Description

A warm and comforting strawberry crisp topped with a buttery oat mixture, perfect for busy families.


Ingredients

  • 5 heaping cups fresh strawberries, hulled and quartered
  • 1/4 cup granulated white sugar
  • 1 teaspoon vanilla extract
  • 3 Tablespoons cornstarch
  • 1 cup all purpose flour
  • 3/4 cup old fashioned oats
  • 2/3 cup granulated white sugar
  • 2/3 cup packed brown sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 cup (1 stick) butter, melted


Instructions

  1. Preheat oven to 350 degrees F. Grease a deep dish pie plate or large baking dish with butter or cooking spray.
  2. Combine the chopped strawberries and 1/4 cup granulated sugar in a large bowl, mixing until strawberries absorb the sugar. Add cornstarch and vanilla extract, stir until coated, and pour into prepared baking dish.
  3. In a separate bowl, mix flour, oats, 2/3 cup granulated sugar, brown sugar, salt, and cinnamon. Stir in melted butter until crumbly.
  4. Sprinkle the oat mixture over strawberries, pressing lightly in areas to form clusters.
  5. Bake for 35-40 minutes until fruit is bubbly and topping is golden brown.
  6. Allow to cool slightly before serving. Serve warm with vanilla ice cream.

Notes

Watch for golden edges on the topping; if the clusters brown too quickly, tent the dish with foil. For a dairy-free version, swap coconut oil for butter.
