Description

A delightful and simple recipe for strawberry cream sandwiches, perfect for busy families and summer gatherings.


Ingredients

  • 12 ripe strawberries
  • 1 pint heavy whipping cream
  • 8 oz cream cheese (softened to room temperature)
  • 1/4 cup powdered sugar (or more to taste)
  • 1/4 tsp vanilla extract
  • 1 tbsp lemon zest
  • 8-10 slices white bread


Instructions

  1. Wash, hull, and thoroughly dry the strawberries.
  2. Whip the cream cheese on high until light and fluffy, about 2-3 minutes.
  3. Add the heavy cream, vanilla, and sugar. Continue whipping on high until the whipped cream is set stiff.
  4. Add the lemon zest and stir to combine.
  5. Spread a generous layer of the cream mixture on each slice of bread.
  6. Arrange the strawberries on half of the bread slices.
  7. Add more cream mixture on top of the strawberries.
  8. Place another slice of bread on top and gently press it together.
  9. Score a line diagonally on the top slice with a knife.
  10. Wrap each sandwich tightly in plastic wrap and place them on a tray. Refrigerate for 2 hours to set.
  11. Once chilled, cut off the edges and then make your diagonal cut along the scored line.

Notes

Use fresh ingredients for the best flavor. Store any leftovers in the refrigerator for a couple of days. You can also use plain Greek yogurt instead of cream cheese for a healthier option.
