Strawberry Cheesecake Cookies

Description

Delicious soft cookies filled with creamy cheesecake and strawberry jam, perfect for family gatherings.


Ingredients

  • 6 oz (170 g) cream cheese, cold
  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 12 oz (340 g) fresh strawberries, hulled and finely diced
  • 1/4 cup (50 g) granulated white sugar
  • 2 3/4 cups (344 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar, for rolling dough


Instructions

  1. Line a small cookie sheet with parchment paper.
  2. In a small bowl, add cold cream cheese, sugar, and vanilla. Using an electric mixer on medium-high speed, mix until fluffy and the sugar dissolves, about 2 minutes.
  3. Scoop the cream cheese filling into 18 portions of about 2 teaspoons each onto the baking sheet. Slightly flatten each to form thick discs. Freeze until completely firm.
  4. In a medium pot over medium heat, combine the diced strawberries and 1/4 cup granulated sugar. Cook for approximately 45 minutes, smashing the strawberries halfway through. Chill in the refrigerator after cooking.
  5. Preheat your oven to 350℉ (175℃) and line two baking sheets with parchment paper.
  6. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. In a large bowl, use an electric mixer to beat the softened butter and granulated sugar on high speed until fluffy.
  8. Add the egg and vanilla to the mixture and mix until pale and fluffy.
  9. Add dry ingredients and mix on low speed until just combined.
  10. Layer the dough with the strawberry jam and the frozen cheesecake discs, then form into cookies.
  11. Roll the dough discs in granulated sugar and place on baking sheets.
  12. Bake 6 at a time for 11–12 minutes. Allow to cool before serving.

Notes

For a twist, try using blueberries or raspberries instead of strawberries.
