Ingredients
- 2 cups fresh blueberries
- 1 1/2 cups crushed cookies (for the crust)
- 1/2 cup butter, melted (for the crust)
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine crushed cookies and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream and flour until just combined.
- Gently fold in fresh blueberries.
- Pour cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let the cake cool completely before removing from the pan.
- Chill in the fridge for at least 4 hours before serving.
Notes
For a creamier texture, let your cream cheese sit out at room temperature for about 30 minutes before mixing.
