Ingredients

  • 2 cups fresh blueberries
  • 1 1/2 cups crushed cookies (for the crust)
  • 1/2 cup butter, melted (for the crust)
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine crushed cookies and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream and flour until just combined.
  6. Gently fold in fresh blueberries.
  7. Pour cheese mixture over the crust in the springform pan.
  8. Bake for 50-60 minutes or until the center is set.
  9. Let the cake cool completely before removing from the pan.
  10. Chill in the fridge for at least 4 hours before serving.

For a creamier texture, let your cream cheese sit out at room temperature for about 30 minutes before mixing.
