Ingredients
- 2 cups mashed sweet potatoes
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- Cream cheese frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, oil, eggs, and vanilla. Mix until smooth and creamy.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the sweet potato mixture, mixing gently until just combined.
- Pour the batter evenly into the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool for 10 minutes, then transfer to wire racks to cool completely.
- Once cooled, frost with cream cheese frosting and serve.
Notes
Use fresh sweet potatoes for the best texture and flavor. Roasted sweet potatoes can add a caramelized flavor.
