Ingredients

  • 2 cups mashed sweet potatoes
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Cream cheese frosting (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, oil, eggs, and vanilla. Mix until smooth and creamy.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the sweet potato mixture, mixing gently until just combined.
  5. Pour the batter evenly into the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool for 10 minutes, then transfer to wire racks to cool completely.
  8. Once cooled, frost with cream cheese frosting and serve.

Notes

Use fresh sweet potatoes for the best texture and flavor. Roasted sweet potatoes can add a caramelized flavor.
