Ingredients

  • 3 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses


Instructions

  1. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
  2. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and molasses until well combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing until combined.
  5. Cover the dough and chill in the refrigerator for at least 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. Roll the chilled dough into balls and place them on a baking sheet lined with parchment paper.
  8. Bake for 8-10 minutes, or until the edges are slightly crisp but centers are soft.
  9. Let them cool on the baking sheet for 5 minutes before transferring to a cooling rack.
