A comforting Snickerdoodle Bundt Cake filled with warm spices and a rich cream cheese frosting, perfect for family gatherings.
Ingredients
- 1 box vanilla cake mix (15.25 ounces)
- 3 eggs
- ½ cup vegetable oil
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- ½ cup brown sugar (packed)
- ⅓ cup all-purpose flour
- 1 tablespoon cinnamon
- ⅓ cup butter (melted)
- 8 ounces cream cheese (softened)
- ½ cup butter (softened)
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- ⅓ cup sugar (granulated or sanding)
- 2 teaspoons cinnamon
Instructions
- Preheat the oven to 350°F.
- In a large mixing bowl, combine the vanilla cake mix, eggs, vegetable oil, buttermilk, and 1 teaspoon of vanilla extract. Mix until well combined.
- In another bowl, mix the brown sugar, all-purpose flour, and 1 tablespoon of cinnamon. Pour the melted butter into the mixture and stir until crumbly.
- Grease your bundt pan and pour half of the vanilla cake batter into the pan. Sprinkle half of the cinnamon swirl mixture over it. Pour the remaining batter and top with the rest of the swirl. Swirl through the batter with a knife.
- Bake for 50-60 minutes until golden edges appear.
- While the cake cools, mix softened cream cheese, softened butter, and 1 teaspoon of vanilla extract until smooth. Gradually add powdered sugar until the glaze is thick but pourable.
- In a small bowl, mix granulated sugar and 2 teaspoons of cinnamon for the topping.
Notes
This cake tastes even better the next day as the flavors deepen. Feel free to experiment with different frostings or add-ins like nuts or cocoa for variations.
