A nostalgic Snickerdoodle Bundt Cake that captures the warmth of home cooking with its cinnamon goodness.
Ingredients
- 1 box vanilla cake mix (15.25 ounces)
- 3 eggs
- ½ cup vegetable oil
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- ½ cup brown sugar (packed)
- ⅓ cup all-purpose flour
- 1 tablespoon cinnamon
- ⅓ cup butter (melted)
- 8 ounces cream cheese (softened)
- ½ cup butter (softened)
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- ⅓ cup sugar (granulated or sanding)
- 2 teaspoons cinnamon
Instructions
- Preheat the oven to 350°.
- In a large mixing bowl, combine the box vanilla cake mix, eggs, vegetable oil, buttermilk, and vanilla extract; blend until smooth.
- In a separate bowl, mix the brown sugar, all-purpose flour, and cinnamon together for the swirl mixture.
- Grease a bundt cake pan. Pour half of the vanilla cake batter into the pan, sprinkle with half of the cinnamon mixture, add the remaining vanilla batter, and top with the remaining cinnamon mixture; swirl gently.
- Bake the cake for about 40-45 minutes until a toothpick inserted comes out clean.
- While the cake cools, beat together the cream cheese, softened butter, and vanilla extract; gradually add powdered sugar until smooth for the glaze.
- Mix granulated sugar and cinnamon for the topping and sprinkle over the cake.
Notes
For extra flavor, add a pinch of nutmeg to the batter. Keep leftovers for breakfast—it’s excellent with coffee!
