A comforting one-pot meal blending shrimp, sausage, and rice with vibrant flavors, perfect for busy families.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound sausage, sliced
- 1 cup rice
- 1 onion, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for serving
Instructions
- Heat olive oil over medium heat in a large pot.
- Brown the sausage until it has color and some crisp edges, then remove it and leave some fat in the pot.
- Add the onion, bell pepper, and garlic; sauté until softened.
- Stir in the rice and toast lightly for a couple of minutes.
- Add diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper, stirring well.
- Bring to a boil, then reduce heat and simmer for about 20 minutes or until rice is cooked.
- Stir in the shrimp and cook until they are pink, about 3 to 5 minutes.
- Return the sausage to the pot and let everything sit on low heat for a minute.
- Serve hot, garnished with chopped green onions.
Notes
For added freshness, use fresh parsley or basil. For a healthier twist, swap some white rice for brown rice.
