Ingredients
- 1 pound Italian sausage (mild or spicy)
- 3 cloves garlic, minced
- 2 medium sweet potatoes, diced
- 6 cups chicken or vegetable broth
- 1 package (9 oz) three-cheese tortellini
- 4 cups fresh spinach
- 1 cup heavy cream
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned, breaking it up into bite-sized pieces.
- Add minced garlic and diced sweet potatoes, cooking until the sweet potatoes are tender.
- Pour in the broth and bring to a boil.
- Add the tortellini and cook according to package instructions until tender.
- Stir in the spinach and cream, cooking just until the spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot, garnished with grated cheese if desired.
