Description

A comforting garlic soup that transforms humble ingredients into a cozy meal for busy families.


Ingredients

  • 1 head of garlic, cloves separated and peeled
  • 4 cups of chicken or vegetable broth
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 potatoes, diced
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, stirring occasionally.
  2. Add the peeled garlic cloves and cook for 1-2 minutes until fragrant and slightly softened.
  3. Stir in the diced potatoes, broth, and thyme. Bring to a boil, then reduce heat and let simmer for 30 minutes until the potatoes are very tender.
  4. Use an immersion blender to puree the soup until smooth, or leave it chunky for texture.
  5. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

For a creamier soup, add a splash of coconut milk. Use fresh parsley for a bright flavor.
