A comforting garlic soup that transforms humble ingredients into a cozy meal for busy families.
Ingredients
- 1 head of garlic, cloves separated and peeled
- 4 cups of chicken or vegetable broth
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 potatoes, diced
- 1 teaspoon of thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, stirring occasionally.
- Add the peeled garlic cloves and cook for 1-2 minutes until fragrant and slightly softened.
- Stir in the diced potatoes, broth, and thyme. Bring to a boil, then reduce heat and let simmer for 30 minutes until the potatoes are very tender.
- Use an immersion blender to puree the soup until smooth, or leave it chunky for texture.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
Notes
For a creamier soup, add a splash of coconut milk. Use fresh parsley for a bright flavor.
