Ingredients
- 2 large sweet potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons honey
- 3/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley (optional for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel the sweet potatoes. Slice them into 1/2-inch thick rounds.
- Place the rounds in a large bowl. Drizzle with olive oil, salt, pepper, and paprika. Toss until each round is evenly coated.
- Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
- Roast in the oven for 25-30 minutes, flipping halfway through.
- Once the potatoes are tender and slightly caramelized, remove them from the oven. Drizzle the honey over the warm rounds.
- Sprinkle the crumbled feta cheese generously on top. Return to the oven for an additional 5 minutes.
- Garnish with fresh parsley before serving.
