  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons honey
  • 3/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley (optional for garnish)


Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes. Slice them into 1/2-inch thick rounds.
  3. Place the rounds in a large bowl. Drizzle with olive oil, salt, pepper, and paprika. Toss until each round is evenly coated.
  4. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  5. Roast in the oven for 25-30 minutes, flipping halfway through.
  6. Once the potatoes are tender and slightly caramelized, remove them from the oven. Drizzle the honey over the warm rounds.
  7. Sprinkle the crumbled feta cheese generously on top. Return to the oven for an additional 5 minutes.
