Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons honey
  • Fresh herbs (such as thyme or rosemary) for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed pumpkin with olive oil, salt, and pepper.
  3. Spread the pumpkin on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized.
  4. Remove from the oven and drizzle honey over the roasted pumpkin.
  5. Sprinkle crumbled feta cheese on top.

Notes
