Ingredients
- 1 medium pumpkin, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
- 2 tablespoons honey
- Fresh herbs (such as thyme or rosemary) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, toss the cubed pumpkin with olive oil, salt, and pepper.
- Spread the pumpkin on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized.
- Remove from the oven and drizzle honey over the roasted pumpkin.
- Sprinkle crumbled feta cheese on top.
- Garnish with fresh herbs and serve warm.
Notes
For extra flavor, add a pinch of nutmeg or cinnamon before roasting. You can also use pre-cut pumpkin for convenience.
