Delicious bite-sized Oreo Cheesecake Bites perfect for family gatherings or cozy nights in.
Ingredients
- 16 Oreos
- 16 ounces cream cheese, softened (2 packages of 8 ounces each)
- 1/2 cup sugar
- 2 whole eggs
- 1 teaspoon vanilla extract
- 3/4 cup large and small Oreo cookie crumbs (reserve some for topping)
Instructions
- Preheat the oven to 350°F. Line a regular cupcake baking pan with 16 paper liners. Place one Oreo cookie in each liner and set aside.
- In a large mixing bowl, beat together softened cream cheese, sugar, eggs, and vanilla extract using an electric mixer for 2-3 minutes until smooth.
- Sprinkle in the Oreo cookie crumbs and gently fold with a spatula until combined.
- Spoon the Oreo cheesecake mixture evenly on top of the Oreo cookies in each cupcake liner, about two tablespoons of cheesecake batter per cup.
- Sprinkle each cheesecake with additional Oreo cookie crumbs.
- Bake for 14-16 minutes or until the middles are set.
- Let the cheesecake bites cool for at least 30 minutes. Remove the paper liners and place them in the refrigerator to chill for at least 2 hours before serving.
- Optional: Top with whipped cream and more crushed Oreos before serving.
Notes
For better blending, ensure the cream cheese is at room temperature. Use gentle folding to maintain a light texture.
