A comforting one-pot dish featuring chicken sausage, creamy rice, and butternut squash, perfect for family dinners.
Ingredients
- 12 ounces Chicken and Apple Sausage, sliced
- 4 cups Cubed Butternut Squash
- 3 cups Chicken Broth
- 3-4 cups Baby Spinach
- 1 cup Uncooked Basmati Rice
- 1 Sweet Onion, diced
- 2-4 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
Instructions
- In a large pan over medium heat, sauté sliced chicken sausage in olive oil until golden brown; remove and set aside.
- Add more olive oil if needed, then combine butternut squash, onion, garlic, salt, and pepper; cover and stir until the squash is tender and onion is translucent.
- Pour in chicken broth and blend the mixture until creamy using an immersion blender.
- Add uncooked rice and browned sausage; stir well and cover, simmering on low heat until rice is cooked, about 15-20 minutes.
- Fold in baby spinach until wilted, then serve hot.
Notes
Can substitute butternut squash with sweet potatoes or frozen vegetables. Leftovers can be stored in the fridge for up to three days.
