One-Pan Juicy Chicken with Balsamic Sauce

Description

A comforting and quick one-pan chicken dinner featuring juicy chicken breasts, sweet and tangy balsamic vinegar, and bursting cherry tomatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • Fresh basil leaves, for garnish
  • Salt and pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then add to the skillet and sear until golden brown on both sides, about 3 to 4 minutes per side.
  3. Add balsamic vinegar and cherry tomatoes to the skillet, stirring to nestle tomatoes around the chicken.
  4. Bring to a simmer and then transfer the skillet to the preheated oven.
  5. Bake for 20-25 minutes or until the chicken is cooked through (165°F in the thickest part).
  6. Remove from the oven and top with mozzarella cheese, then return to the oven for an additional 5 minutes until the cheese is melted.
  7. Garnish with fresh basil before serving.

Notes

If the sauce reduces too quickly, add a splash of water or chicken broth to loosen it. Enjoy with rice, toasted bread, or a fresh salad.
