Description

Deliciously soft oatmeal cookies filled with a sweet marshmallow cream, perfect for family gatherings and lunchboxes.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar
  • A dash more cinnamon


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla and mix until combined.
  4. In a separate bowl, whisk together oats, flour, cinnamon, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture and mix until just combined.
  6. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Let cookies cool completely.
  9. For the filling, mix marshmallow fluff and powdered sugar until smooth.
  10. Spread filling on the flat side of half the cookies and sandwich with the remaining cookies.

Notes

For a softer cookie, use quick oats. If cookies spread too thin, chill dough before baking.
