  • 2 cups pinto beans, cooked
  • 1 can fire-roasted tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a large pot, sauté the onion and garlic until translucent.

  3. Stir in the cooked pinto beans, fire-roasted tomatoes, vegetable broth, cumin, chili powder, salt, and pepper.
