A simple and comforting cake that is easy to make, perfect for any occasion and pairs well with tea and soup.
Ingredients
- 150 grams (1 ½ cups) all-purpose flour
- 100 ml (½ cup) water
- 100 ml (½ cup) milk
- 80 grams (⅓ cup) butter
- 4 large eggs
- 1 teaspoon baking powder
- ½ teaspoon salt
- 500 ml (2 cups) milk
- 150 grams (¾ cup) sugar
- 100 grams (1 cup) all-purpose flour
- 2 large eggs
- 180 grams (¾ cup) butter
- Icing sugar or your favorite garnish
Instructions
- Preheat the oven to 180°C (350°F). Butter a 9-inch pan and line the bottom with parchment paper.
- In a bowl, sift 150 grams of all-purpose flour with 1 teaspoon baking powder and ½ teaspoon salt. Mix briefly.
- In a saucepan, warm 100 ml water, 100 ml milk, and 80 grams butter until the butter melts. Let cool slightly.
- Beat 4 large eggs in a bowl and slowly pour in the warm milk-butter mixture while whisking.
- Fold the wet mixture into the dry flour mixture until just combined.
- In a saucepan, warm 500 ml milk with 150 grams sugar until dissolved.
- In a bowl, whisk 100 grams flour with 2 large eggs until smooth, then temper with warm milk mixture and return to saucepan.
- Cook over low heat until thickened, then remove from heat and stir in 180 grams butter.
- Pour half of the dough into the prepared pan, followed by the cream filling, then top with remaining dough.
- Tap the pan and bake for 35 to 45 minutes until golden and set.
- Cool in the pan for 15 minutes before inverting onto a rack. Dust with icing sugar.
Notes
Use the freshest eggs for the best flavor. This cake gets better the second day.
