Ingredients
- 1 pound Chicken breasts (Cut into uniform pieces for even cooking)
- 2 tablespoons Extra virgin olive oil (Use liberally to enhance taste)
- 1 medium Zucchini (Yellow squash can be substituted)
- 1 large Red bell pepper (Any sweet pepper variety can be used)
- 1 medium Red onion (Yellow or white onions are suitable substitutes)
- 1 cup Cherry tomatoes (Canned diced tomatoes are a convenient alternative)
- 1/2 cup Kalamata olives (Green olives are an alternative)
- 2 cloves Garlic (Fresh minced garlic is best for flavor)
- 1/4 cup Sun-dried tomatoes (Use additional fresh tomatoes if unavailable)
- 1 teaspoon Dried oregano (Essential for authentic flavor)
- 1 teaspoon Dried basil (Fresh herbs can further elevate the dish)
- 1 teaspoon Dried thyme
- 2 tablespoons Lemon juice (Add at the end of cooking)
- 1/2 cup Feta cheese (Omit for a dairy-free option)
- 1/4 cup Fresh parsley (Optional garnish)
Instructions
- Prepare the ingredients by cutting the chicken, chopping the zucchini, and slicing the bell pepper.
- Heat the skillet over medium-high heat and add olive oil until it shimmers.
- Add the chicken pieces in a single layer and sear for 3-4 minutes, then flip and brown the other side for another 3 minutes.
- Remove the chicken and set aside, leaving the tasty bits in the pan.
- Sauté the onion for 2 minutes until it softens, then add minced garlic and stir until fragrant.
- Add bell pepper and zucchini, tossing to cook for about 4 minutes.
- Stir in cherry and sun-dried tomatoes, letting them release their juices for about 2 minutes.
- Return the chicken to the skillet, add olives, and sprinkle in the dried herbs. Cook for 2-3 minutes to blend flavors.
- Finish with lemon juice and feta before serving over rice or greens.
- Enjoy warm and adjust seasoning if needed.
