Instructions

  1. Prepare the ingredients by cutting the chicken, chopping the zucchini, and slicing the bell pepper.
  2. Heat the skillet over medium-high heat and add olive oil until it shimmers.
  3. Add the chicken pieces in a single layer and sear for 3-4 minutes, then flip and brown the other side for another 3 minutes.
  4. Remove the chicken and set aside, leaving the tasty bits in the pan.
  5. Sauté the onion for 2 minutes until it softens, then add minced garlic and stir until fragrant.
  6. Add bell pepper and zucchini, tossing to cook for about 4 minutes.
  7. Stir in cherry and sun-dried tomatoes, letting them release their juices for about 2 minutes.
  8. Return the chicken to the skillet, add olives, and sprinkle in the dried herbs. Cook for 2-3 minutes to blend flavors.
