Ingredients
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups spinach, chopped
- 1 cup carrots, diced
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for topping
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until onion is translucent.
- Add diced chicken and cook until browned.
- Pour in chicken broth and bring to a simmer.
- Add carrots and cook for about 10 minutes until they are tender.
- Stir in spinach, heavy cream, Italian seasoning, salt, and pepper.
- Simmer for an additional 5 minutes.
- Serve hot, topped with Parmesan cheese.
