Ingredients

  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups spinach, chopped
  • 1 cup carrots, diced
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for topping


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until onion is translucent.
  2. Add diced chicken and cook until browned.
  3. Pour in chicken broth and bring to a simmer.
  4. Add carrots and cook for about 10 minutes until they are tender.
  5. Stir in spinach, heavy cream, Italian seasoning, salt, and pepper.
  6. Simmer for an additional 5 minutes.
  7. Serve hot, topped with Parmesan cheese.
