Description

A warm and comforting creamy chicken dish with sun-dried tomatoes and spinach, perfect for busy weeknights.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese, for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, thyme, and basil. Sear the chicken until golden brown on both sides, then remove and set aside.
  2. In the same skillet, add garlic and cook until fragrant. Add chicken broth and heavy cream, then stir in sun-dried tomatoes and spinach.
  3. Return the chicken to the skillet, covering it in the sauce. Reduce the heat to a gentle simmer and cook for about 20 minutes, or until the chicken is cooked through and the sauce thickens.
  4. Serve with pasta or rice and garnish with Parmesan cheese.

Notes

Pat the chicken dry before searing for better browning. Adjust sauce thickness as needed while cooking.
