Description

A comforting, rich potato soup that’s perfect for families, featuring potatoes, cheddar cheese, and bacon.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • Salt and pepper to taste
  • Green onions or chives for garnish


Instructions

  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the diced potatoes and vegetable broth. Bring to a boil and then simmer until the potatoes are tender.
  3. Use a potato masher or immersion blender to mash or blend some of the soup for a creamy texture, while leaving some chunks.
  4. Stir in the heavy cream and cheddar cheese, and season with salt and pepper.
  5. Serve hot, topped with crumbled bacon and green onions or chives.

Notes

For a lighter twist, swap half the heavy cream for whole milk. If freezing, leave out the cream and cheese and add them when reheating.
