Description

A delightful blend of cookie, caramel, and chocolate that brings comfort to any occasion.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups semi-sweet chocolate chips
  • 5 ounces evaporated milk
  • 1 bag (14 oz) caramels
  • 1/2 cup peanut butter


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking pan.
  2. In a small bowl, combine flour, baking soda, and salt; set aside.
  3. In a large bowl, beat the softened butter, sugar, brown sugar, and vanilla until creamy.
  4. Add eggs one at a time, beating well after each addition.
  5. Gradually mix in the flour mixture until just combined.
  6. Stir in chocolate chips.
  7. Spread half of the cookie dough in the prepared pan and bake for 8-10 minutes.
  8. While baking, melt the caramels and evaporated milk in a double boiler, stirring until smooth, then stir in peanut butter.
  9. Spread the caramel sauce over the baked cookie dough base.
  10. Drop spoonfuls of the remaining cookie dough over the caramel and spread it gently.
  11. Bake for an additional 15-20 minutes, until edges are light golden brown.
  12. Let the bars cool completely before cutting into squares.

Notes

These bars can be stored at room temperature in an airtight container for up to a week. They also freeze well for up to three months.
