Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, coconut oil (or vegan butter), erythritol, and vanilla extract until well mixed.
- Roll the dough into small balls and place them on a lined baking sheet.
- Bake for 10-12 minutes, or until lightly golden.
- Once cooled, roll the cookies in powdered erythritol before serving.
