Description
A cozy, low-carb twist on traditional eggnog perfect for holiday gatherings.
Ingredients
- 4 large egg yolks
- 1/3 cup erythritol or other keto-friendly sweetener
- 2 cups unsweetened almond milk
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground nutmeg
- 1/2 teaspoon cinnamon
- A pinch of salt
Instructions
- In a mixing bowl, whisk together the egg yolks and erythritol until well combined.
- In a saucepan, combine almond milk, heavy cream, vanilla extract, nutmeg, cinnamon, and salt. Heat over low until warm, but do not boil.
- Gradually whisk the warm mixture into the egg yolk mixture to temper the eggs.
- Once combined, return to the saucepan and cook over low heat until slightly thickened, stirring constantly.
- Remove from heat and cool before serving. Enjoy chilled or warm.
Notes
Taste as you go and adjust the sweetener to your liking. This eggnog can be made ahead of time and refrigerated for up to four days.
